A simple baked egg dish with sautéed vegetables and spinach, baked until done. This can be served as a 'scramble' or a slice of the bake.

First, sauté the red pepper, onion, mushrooms, and garlic. Let the sautéed vegetable mixture cool slightly. In a bowl, combine the cooled vegetable mixture with lots of spinach, eggs, egg whites, and your choice of spices. Pour the mixture into a baking dish and bake at 350°F (175°C) for 30-35 minutes until the egg mixture is set and done.
