A quick and easy French toast recipe, perfect for a weekday breakfast. Made with gluten-free bread and can be served with vegan butter and maple syrup.

1) In a large bowl whisk together 2 eggs, 1/4 cup almond milk, 1 tsp vanilla, 1 tsp cinnamon and a pinch of salt. 2) Heat your griddle (or skillet) on medium-low heat. Once hot, melt 1 tbsp coconut oil on your griddle. 3) Dunk 6 slices of bread into the egg mixture before laying them on your griddle to cook for 5 minutes on each side. Serve with whatever toppings you like, such as vegan butter and pure maple syrup.
