Chocolate Covered Caramel Pretzel Bars

Add the first three ingredients (maple syrup, nut milk, cashew/almond butter) into a small saucepan over medium heat. Whisk until everything is melted and combined. Turn off the heat and remove the saucepan from the burner. Add in the crushed pretzels and protein powder. Whisk until completely smooth. Line a small container (approximately 3x5 inches) with parchment paper and press the mixture into the container, ensuring an even layer on top. Place the mixture in the fridge for at least 2 hours or in the freezer for 30 minutes until hardened. Once hardened, melt the chocolate chips and coconut oil together via the microwave in 30-second increments until completely smooth. Using the parchment paper, remove the mixture from its container and slice it into 9 even bars. Dip each bar in the melted chocolate and return it to the parchment paper. Place back in the freezer until set!
