Cinnamon Roll Cookies

In a large mixing bowl, whisk together 3/4 cup butter, 1/4th cup sugar, egg, maple syrup (or milk!) and vanilla. Add in the baking powder, salt, flour and protein. Chill for at least 30 minutes. Preheat oven to 350. Lay out a piece of parchment paper to form the cookies. Using your fingers, quickly make a rectangle shape with the dough (about 12 by 6) inches. If using the optional 2 tbsp of butter, rub it over the dough before sprinkling on the sugar and cinnamon. Very carefully, roll the dough starting on the short side (you want it to be a short, thick log!) I used the parchment paper to held me roll it tightly. Move the parchment paper to a baking sheet before cutting 8 even slices. Spread them apart (making sure they're still tightly rolled) and bake 20-22ish minutes. Top w/ whatever frosting or eat them plain!
