Fluffy Vegan Biscuits

Combine the flour, baking powder and salt in a large bowl. Add in the butter and start mashing the butter (or "cutting") until the butter starts to combine with the flour and is no more than the size of a pea. Pour the milk into the mixture and stir until combined - the dough will be a little tacky. Lightly flour a working surface, turn out the dough onto the floured surface and start kneading the dough with your hands. This should take about a minute or two - you want the dough to no longer be tacky. If needed, adding in some more flour and knead again. Once the dough is no longer tacky, cut the dough into 6 evenly sized pieces. Place them in a liberally greased 9x5 baking dish and set the dish in your fridge to let the dough rest for about 20-30 minutes. While the dough is resting, preheat your oven to 425 degrees F. Melt a little butter to drizzle on top of the biscuits right before baking. Once the dough is done resting, drizzle the butter on top of the biscuits and bake the biscuits for 12-15 minutes. Enjoy with a little extra butter and jam, honey or eat them savory as a breakfast sandwich.
