Vegan Banana Snickers

These Banana Snickers are a delicious vegan, gluten-free, and refined sugar-free alternative to the classic ice cream bar. Made with frozen banana slices, homemade vegan caramel, peanuts, and melted chocolate, they're sure to satisfy your sweet cravings.

What you need

tbsp maple syrup

tsp coconut oil

tsp vanilla extract

tbsp peanut butter

cup caramel sauce

pinch salt

tbsp salted peanuts

tbsp non-dairy milk
Instructions
To make the vegan caramel sauce: Whisk the plant-based milk, maple syrup, and peanut butter together in a saucepan over medium heat. Once it combines and thickens, take the pan off the heat and whisk in the vanilla extract. If the caramel thickens too much, add an additional splash of plant-based milk. To make the banana snickers: Slice your banana into 5 slices before cutting each slice down the middle (this will give you 10 pieces). Place the banana pieces in a single layer on a parchment-lined dish and place it in the freezer until they are frozen, about 30 minutes. Once frozen, top the banana slices with the prepared caramel sauce, a few peanuts, and a pinch of salt. Place the plate back in the freezer for 15 minutes to allow the caramel to harden. After the 15 minutes, finish them off with a heavy drizzle of melted chocolate. To melt the chocolate, place the chopped chocolate and coconut oil in a microwave-safe dish and melt for 30-60 seconds, stirring until smooth.View original recipe
