Vegan Peppermint Brownie Cookies

0 Whisk together the flour, cocoa powder, baking powder, and a pinch of salt in a bowl. 
1 Using an electric mixture, whisk the vegan butter, sugar, almond milk, and vanilla extract until light and fluffy.
2 Gradually add the dry mix into the wet mix. 
3 Gently fold in those vegan chocolate chips. 
4 Use a spoon or your hands—no judgment here—to drop rounds of dough onto a parchment lined baking sheet. Use your hands to ensure the dough has a nice round shape!
5 Place the cookies in your fridge to set up for at least 30 minutes. 
6 Now you can fire up that oven to 350°F (175°C) wait for the dough to finish chillin'. 
7  Pop those babies in the oven for 15-18 minutes. You'll know they're done when the edges look set. 
8 Let the cookies cool on the baking sheet for a bit before transferring them to a wire rack. Trust me, the wait is worth it.
9 Once the cookies have cooled, go ahead and top with frosting. You can do this with a spoon for a more rustic look or get all fancy and use a piping bag. 
10 Finally, sprinkle some crushed candy canes on top and enjoy!
