Nutty Brownie Stuffed Cookies

I debated calling these Mad Hatter Cookies because these defy logic but the combo is truly SO FREAKING GOOD 👏🏻 double the batch and use a whole batch of brownies instead of just half and thank me later.

What you need

tsp baking soda

tsp vanilla extract

cup granulated sugar

tsp salt

cup non-dairy milk

cup brownie mix

cup walnut pieces
Instructions
*Make sure that your brownies are completely chilled before making these cookies - if you need to make them beforehand, place the brownies in your freezer for about 30-45 minutes until that firm up.* In the bowl of your electric mixture, cream the butter and sugar together until smooth. Add in the plant-based milk and vanilla extract and whisk once more. Next, add in the flour, baking soda and salt. Stir to combine. Finally, add in the brownie pieces and chopped nuts then turn on your electric mixture for around 10-15 seconds or until the dough is just combined. Prep a baking sheet by lining it with parchment paper and set it next to your bowl. Divide the batter evenly into 6 parts, using your hands, roll the dough into balls and place them on the baking sheet. Chill the dough for at least 30 minutes in your refrigerator. While the dough is chilling, preheat your oven to 350 degrees F. Once preheated, bake the cookies for 14-16 minutes. Let them cool for at least 10 minutes before enjoying!View original recipe
